FENNOMENAL

toasted fennel seed cream + fennel pollen cake crumble + braised fennel bulb

THE STORY

Our friend Joseph of A’acquisto Farm reached out to let us know he had a surplus of fennel. Naturally, I wanted to create an ice cream that could incorporate this in some way or another, but fennel seemed like a scary endeavor to tackle; you don’t typically see it in desserts. SO we got to work. This ice cream incorporates every single part of the fennel, from the bulb to the seed.

WHAT'S IT TASTE LIKE?

It has all the texture and flavor we could pull from the fennel plant. If you aren’t a black licorice fan, this may not be your cup of tea. Or maybe it is…who is to say?! Either way, you should try it. I know it will not fly off the shelf, but this is the type of flavor that really makes us proud.
