toasted cherrywood cream + tart cherry compote + macadamia nut clusters

THE STORY
When I picture spring and I think of the burst of flowers that brighten the bare twigs on the trees, I think of the cherry blossoms. Seeing these pink blooms cover the cold-looking brown twigs is a sure sign that warmer months are upon us. Though we did not use cherry blossoms in this flavor on our ‘Superbloom’ menu, we surely pulled inspiration from cherry tree. We toast cherrywood chips and steep them directly in our base of ice cream. We then made a tart cherry compote by cooking the cherries down in a macadamia nut liqueur and finally, made a macadamia nut cluster to toss in. The local macadamia trees are simply throwing the nuts from their branches and with their sweet nutty flavor, it was hard not to want to use them in the ice cream.
WHAT'S IT TASTE LIKE?
This flavor honestly tastes like a New York Cherry Cheesecake. The tart cherries pair with the sweet cherrywood cream and truly just make something amazing happen. Though the macadamia nut clusters are nutty in flavor they are the perfect balance to level against the tart cherry swirl. You many not believe it, but you really can pick up the notes of the toasted cherrywood in the background. I think you will really love this one.
